I’m one of those people who thinks that coffee should be its own food group. Someone once said “Coffee is a cup of hope in a world full of chaos and Mondays.”
Diana Mollicone loves coffee too. Even more, she loves the spirit of community she sees displayed by businesses like Coffee Time on Bolton’s south hill. So when decades-long owners Monique and Tellos decided to retire and sell the business Diana jumped in.
“They were just so ingrained in the community” says Diana, “I really didn’t want to risk seeing it gone.” So the Bolton mom took care of that. She bought it.
The business came up for sale in March and working with local realtor Katharine Loucaidou the closing date of May 28th was set. To ensure a smooth changeover and ample training a transition period was agreed to. “I am working on a volunteer basis during the 2 weeks prior to closing day” explains Diana, “and Monique and Tellos are staying for 2 weeks beyond that to assist me with training staff.”
Because of scaled-down hours Monique and Tellos had been keeping the shop open on their own, without extra help. For now Diana plans to be open 6:00AM to 6:00PM Monday to Friday and 8:00AM to 4:00PM on weekends, so she has already hired eight local students, each to work part-time hours. She expects those hours may expand.
Diana’s husband Dmitry will be lending a hand and doing some minor renovations but she really wants to keep the cosy homey feel. “I won’t change a lot” she admits. “But I do plan on a few additions, like some new sandwich options, an Espresso machine, and soft serve ice cream.”
Community involvement was a noticeable characteristic of Coffee Time and Diana says she plans on continuing that legacy.
A licensed engineer by profession this is a whole new path for Diana who is excited about keeping a well-known community asset alive and well. We can all help. Coffee please!!
